collected carcass data on 44 head of DeRouchey cattle at Swift and
Co. in Grand Island, NE. I found these to be an outstanding set of
cattle. This pen of steers graded 87% Prime and Choice with
an average hot carcass weight of 792 lbs., a ribeye area of 13 sq.
inches, and a USDA yield grade of only 2.3. This pen also
went 38% CAB. I rarely see this percentage with an average yield
grade so low. I collect carcass data on the rail of over 30,000 head
per year. This was one of the top loads this year...a powerful set
